The Minerality : stone taste in wine. This is very
subjective.
I smell the minerality in a long retro-olfaction
associated with various complex flavors. I smell very slightly
of minerality in wines made from chemical yeasts
It is mainly present in wines with this
two factors:
• Organic farming (without weed killer);
• Winemaking in natural yeasts.
When these factors are present, the retro-olfaction
is very complex and long.. this
type of wine, I call it spiritual.
Many professionals confuse minerality with aromas of sulfur and metal (the finish of the wine)
